An Evening with Leyenda 1925

For one evening, our kitchen turns its attention to Mexico. Join us for a four-course dinner poured alongside Leyenda 1925, an additive free tequila made from one hundred percent blue agave by the third generation of the González family in Los Altos de Jalisco. Each course is built around the pour beside it, opening with a Paloma Rosa welcome cocktail and closing with a Pecan Butter Carajillo.

From Los Altos de Jalisco

Leyenda 1925 carries the legacy of a family that for three generations has harvested the agave fields of Los Altos de Jalisco. For six to seven years, the agave grows until it is carefully selected and harvested by jimadores. After harvesting, it is cooked for 36 hours in direct steam at high temperature, followed by 24 hours of resting. After which, the agave juice is carefully extracted using a five-step roller mill, preserving the essence of the agave. The fermentation process is carried out over a 72-hour period before the distillation process can begin, preserving the pure essence of the 100% agave tequila.
